Tomato Cream Sauce, Antilles Style
This

to prepare this flavorful sauce to use on meats or vegetables.

Plum Tomatoes, peeled and seeded and chopped
2 cloves Garlic, crushed
1 Medium Onion, chopped fine
2 T Olive oil
3 T Antilles Spice Clipper Mango Majic or Antilles Spice Clipper

1 C Heavy Cream
salt and pepper to taste

Drop tomatoes into boiling water for about one minute, then into
ice water.
2. Peel skins from the tomato and discard
3. De-seed the tomatoes and retain juice
4. Chop tomatoes
5. If step 1-3 is too much trouble, open one large can of Italian
tomatoes
6. Sauté onions in oil until translucent
7. Add garlic and sauté for one minute
8. Add tomatoes w/ juice and cook over medium heat for about 20
minutes, until sauce like consistency
9. Add Antilles Spice Clipper Mango Majic or Antilles Spice Clipper

10. Add cream, heat thoroughly
11. Salt and pepper to taste, serve over pasta or as a base for
fish or chicken
